Prep Time: 6-10 minutes

Cook Time: 6-7 hour

Serves: 4

Ingredients

  • Refined Flour 3¼ cups +
  • Milk 1 teaspoon
  • Fresh yeast dissolved in luke warm water 15 grams
  • Sugar ¼ cup
  • Milk ¾ cup
  • Butter softened 110 grams
  • Oil to deep fry
  • Powdered sugar for coating

Method

Step 1

Mix yeast in luke warm water and set aside covered for 25-30 minutes in a warm place. This is done to activate the yeast. There would be bubbles in the mixture which would indicate that the yeast is activated.

Step 2

Sift the flour and salt into a bowl. Make a well in the center of the mixture, add activated yeast mixture, sugar and milk. Break egg and add and mix well. Add butter and mix well. Knead this mixture into a soft dough. Cover the bowl with a muslin cloth and set aside for 1- 1½ hours.

Step 3

Knock back (mash up or knead to get rid of air bubbles) the dough, dust with refined flour and refrigerate for 4-5 hours. Knock back the dough again. Roll out the dough to about one inch thickness. Stamp out one and a half inch rounds with a doughnut cutter.

Step 4

Heat sufficient oil in a wok/kadai. Deep-fry the doughnuts on medium heat till golden brown.

Step 5

Take powdered sugar in a bowl and coat the fried doughnuts in it. You can even glaze them in sugar syrup or dip in melted dark chocolate and sprinkle with fritters, however you like it.
