Whole wheat Stone ground flour or Chakki Atta is an integral part of the Indian kitchen – whether it is to make the daily staple rotis or to whip up a quick treat in the form of a halwa, there are rare  Indian kitchens, anywhere in the world, where you will not be able to find chakki atta or some other kind of wheat flour. What might have been considered plastic by some people, is actually gluten, which is a type of protein that is found in wheat flour which  allows the dough to rise. There are two classes of proteins, Glutenin  and Gliadin. Glutenin is responsible for raising  elasticity and Gliadin is responsible for raising  dough. When you add water to the flour these proteins bond together to create an elastic network of protein called gluten. Hence, Gluten is naturally found in wheat grains.
